Ethiopian Vegetarian Recipes
One of the more surprising cuisines in the world, Ethiopian food packs a spicy punch and a wide array of exotic, savory flavors. Almost every Ethiopian is either Muslim, Jewish, or Ethiopian Orthodox, all of which forbid the consumption of pork, making the cuisine that much more vegetarian-friendly. Ethiopian food is one of the more popular vegetarian cuisines in the west, with most restaurants providing a wide array of vegetarian options.
An Ethiopian vegetarian meal usually consists of several kinds of stews, or wat, served atop injera (Ethiopian flatbread) which is eaten with the right hand. Common Ethiopian seasonings include the chili-spiked, aromatic spice blend berbere and niter kibbeh, a spiced, clarified butter.
