Moroccan Vegetarian Recipes

Moroccan cuisine is one of the most diverse and varied on Earth due to its long merchant history and location at the confluence of the Arab, African, and Western worlds. Unique flavoring ingredients such as preserved lemon, ras el hanout, and some of the world's best olive oils meld to give Moroccan recipes an exotic, intoxicating air, backed by an earthy, comforting warmth.

A usual Moroccan meal can be made up of a variety of salads, breads, hot and cold appetizers, but usually includes a tagine, a slow-braised stew made traditionally in a heavy clay pot of the same name. Morocco is also famous for couscous, a finely-granuled semolina pasta that is cooked with vegetables and spices.
