This wonderful recipe for "vegan cheese" is a creamy blend of cashews and herbs; perfectly suited as a vegan cheese substitute or a wonderful dip for raw veggies.


1/4 lb. raw cashews
1-2 TB nutritional yeast
1 tsp dried herbs (thyme and basil work well)
1 clove garlic
1-2 tsp lemon juice
salt and pepper to taste


Soak cashews in water for at lest 30 minutes. Drain and place in food processor. Add remaining ingredients except water. With processor running add water 1 tsp at a time until desired consistency is reached.

Do not overprocess or add too much water. Add just enough water until the mixture is slightly pureed and loosens from the sides of the processor, beginning to spin with the blade very slightly - it should be smooth, but still textured.
