Vegan Coconut "Bacon"

We've tried a number of bacon analogues over the years, but this one is slightly different, forgoing the traditional soy protein-based preparations in favor of coconut flakes as the main ingredient. Make sure to use large pieces of coconut flakes, not shredded coconut, for this soy protein-free vegan bacon recipe.


2 cups dried coconut flakes
1/4 cup soy sauce
2 TB maple syrup
1 tsp balsamic vinegar
2 TB canola oil
1 tsp pepper, freshly ground
1/4 tsp hickory smoke powder or 1 tsp liquid smoke


Mix all ingredients together except coconut. Add coconut and marinate for 1 hour. Heat oven to 350° and bake on a pan lined with parchment paper for about 30-40 minutes, until brown and crispy, stirring every ten minutes to prevent burning.
