Apple and Aged Cheddar Grilled Cheese

Ingredients:

1 large Gala apple
4 slices aged cheddar cheese
4 slices ciabatta bread
2 Tbs unsalted butter

Directions:

Peel and core the apple, then slice it into 1/4 inch slices. Place a layer of apple and a layer of cheese between two slices of ciabatta bread. Repeat to make second sandwich. Heat a skillet over medium heat. Add 1 Tbs of unsalted butter and allow it to melt, but not brown. Add the sandwiches, making sure the bread soaks up all of the melted butter. Once the first side is browned, remove from pan, add remaining 1 Tbs of butter, and flip the sandwiches back in to the pan to brown the other side.
