Arugula & Goat Cheese Pesto

This pesto is excellent paired with a wild mushroom ravioli.


2 cups arugula leaves, tightly packed
5-6 basil leaves
1/2 cup olive oil
1/2 TB garlic, minced
1/4 cup aged (hard) goat cheese, shredded (or asiago)
1/4 cup pecans, shelled
Salt & pepper, to taste


Place all ingredients except pecans in a food processor or blender and process until smooth. Add pecans and pulse a couple times briefly to incorporate, trying not to grind the nuts too finely.
