1 cup whole brown lentils
3 cups water
Juice of 2 limes
3 medium jalapeno peppers, minced
1/4 cup vegetable oil
1 tablespoon mustard powder
1 medium red onion
Salt to taste


Wash and boil whole lentils in 3 cups of water, using moderate heat until soft for 25 minutes. Remove from heat and drain off any excess water. Mash lentils to make thick pulp. Combine oil, mustard. lime juice, jalapeno peppers and salt to taste with lentils. Mix well and refrigerate before serving.
