Mee Goreng
Translation: Stir Fried Noodles

Ingredients:
8 oz. fresh thin egg noodles
1 cup onion, thinly sliced
1 cup cabbage, thinly sliced
1/2 cup green onion, thinly sliced
1/2 cup carrots, thinly sliced
1/2 zucchini, thinly sliced
1/2 cup mushrooms, sliced
1/2 cup bean sprouts
3 cloves garlic, minced
2 TB oil
2 TB Indonesian sweet soy sauce (kecap manis) (or 2 TB soy sauce & 1 TB sugar)
1 TB vegetarian oyster sauce
1 TB ketchup
1-2 TB sambal, depending on taste
1 egg, fried, cut into strips
1/2 cup thinly sliced scallions, for garnish
1 shallot, chopped fine
1 TB oil
Directions:
Fry shallot in 1 TB oil until golden brown. Drain on paper towels and reserve for garnish.
Prepare noodles, drain, and set aside. Heat 2 TB oil in pan and add garlic. Fry for 30 seconds and then add remaining vegetables. Fry for 3-4 minutes, until vegetables are starting to brown. Add noodles to pan and stir to combine. Mix soy, vegetarian oyster sauce, and sambal together and add to noodles, stirring to cover. Serve and garnish with fried shallots, scallions, and egg strips.
