Vegetarian Banh Mi (Vietnamese Baguette Sandwiches)

One of Vietnam's favorite street foods, Banh Mi is a marriage of the French baguette with purely Asian fillings - a wonderful combo! Most Banh Mi are meat-based, but this vegetarian version is excellent!

1 large baguette, hoagie, or french roll
1/4 cup shredded carrots
1/4 cup shredded daikon radish
1/4 cup red onion
2 TB homemade mayonnaise, mixed with 1/4 tsp. sesame oil
1 egg, fried and cut into strips
2 TB sugar
4 TB vinegar
1 cup cucumber slices
1 cup tofu, diced
1 TB oil
1 TB soy sauce
1 jalapeno, thinly sliced
a few sprigs of cilantro


Mix carrots, daikon, sugar, and vinegar together and let sit for 3 hours. Fry tofu in the oil in a pan or wok over medium high heat until brown and crispy. Deglaze with soy sauce and remove from heat. Spread mayo on split and lightly toasted bread and add all ingredients at will...
