One of Vietnam's favorite street foods, banh mi is a marriage of the French baguette with purely Asian fillings - a wonderful combo!
Ingredients:
1 large baguette, hoagie, or french roll
1/4 cup shredded carrots
1/4 cup shredded daikon radish
1/4 cup red onion
2 TB mayonnaise (preferably homemade), mixed with 1/4 tsp. sesame oil and 1/2 tsp. chili garlic sauce
2 eggs, fried and cut into strips
2 TB sugar
4 TB vinegar
1 cup cucumber, cut into strips
1/2 block tofu, sliced
1 TB oil
1 TB soy sauce
1 jalapeno, thinly sliced
a few sprigs of cilantro
Directions:
Mix carrots, daikon, sugar, and vinegar together and let sit for 3 hours. Fry tofu in the oil in a pan or wok over medium high heat until brown and crispy. Deglaze with soy sauce and remove from heat. Spread mayo on split and lightly toasted bread and add all ingredients at will...

I tried this and it was almost the same as I was taught to make in Vietnam. Instead of mayo, we used avocado butter, which is just mashed and blended until smooth avocado with lime and a little salt added.
