4 cup basil leaves, packed
1/2 cup olive oil
3 cloves garlic, minced
1/2 cup pine nuts, toasted
1/2 cup grated Parmesan (grate it yourself, don't use the stuff in the jar)
Salt & pepper, to taste


Combine all ingredients except pine nuts in a food processor and process until smooth. Add pine nuts and pulse until broken up and combined with pesto, but not completely ground up. Add salt & pepper to taste.
