
Blue Cornbread

Ingredients:
1 1/2 cups blue cornmeal
2 tsp baking powder
1 TB sugar
1/2 tsp salt
1 egg, lightly beaten
3/4 cup buttermilk
3 TB vegetable oil
Directions:
Preheat oven to 350 degrees F and butter a 8 inch square pan. As oven heats, mix together the cornmeal, baking powder, sugar, and salt.
In a separate bowl, combine the egg, buttermilk, and oil. Add the wet ingredients to the dry and stir just until incorporated. Do not over stir. Pour into prepared pan and bake for 30-35 minutes until top is firm and tester comes out clean. Cool in pan for 20 minutes before cooling completely on a wire rack.
