Borscht

Ingredients:

1 lb. red beets, peeled and diced small, reserving a small amount, about 1/4 cup to grate and add to soup later
1 cup potatoes, peeled and diced
1 onion, chopped
2 carrots, peeled and sliced
1 parsnip, peeled and sliced
2 cloves garlic, minced
1 bay leaf
2 cups white cabbage, shredded
6 cups vegetable stock
1 TB sugar
2 TB tomato paste
2 TB red wine vinegar
Salt and pepper, to taste
Sour cream, to garnish (optional)
Dill, chives, and/or parsley, finely chopped, to garnish

Directions:

Heat oil and butter in pan over medium heat and saute beets (except for the reserved amount), onion, garlic, carrot, and parsnip for about 5-6 minutes until translucent. Add the rest of the ingredients except the garnished, bring to a boil, then simmer for about 30 minutes, until all vegetables are tender. Add the reserved grated beet and simmer for 5 more minutes. Season with salt and pepper and serve hot. Garnish with herbs and sour cream.
