Hong you - literally "red oil" - is an indispensable ingredient in the Sichuan pantry, finding its way into a wide variety of dishes. Make sure your glass jar is large enough to handle all the hot oil before you pour!
1/2 cup hot red chilies, coarsely ground
2 cups peanut oil
1 small slice fresh ginger
Heat peanut oil and ginger to 250° F (use a thermometer). Place ground chilies in a clean glass jar, remove ginger from oil, and pour hot oil over the chili flakes and let cool.
