Chimichurri

The national sauce of Argentina, chimichurri is amazing as an accompaniment to grilled foods of all kinds.
Ingredients:
1/4 cup red wine vinegar
1/2 cup olive oil
1/4 cup boiling water
1 cup chopped fresh parsley
1/2 white onion
5 small cloves garlic
1 TB dried oregano
1 tsp paprika
1 bay leaf
1 tsp. salt
1 tsp. black pepper
1 tsp. hot chili flakes
Directions:
Place all ingredients except oil, water, and vinegar in a food processor and pulse until well mixed. Let sit for 30 minutes. Boil the water and vinegar together quickly and pour over the mixed ingredients (this is done in Argentina to mellow the garlic and parsley a little bit). Puree, while slowly drizzling in oil, until chimichurri reaches a smooth consistency. Taste and add salt if necessary.
