Doro Wat

Ingredients:
1 lb. soy nuggets (or other chicken substitute), cut into 1" chunks
1/2 lemon, juiced
1 onion, chopped
2 cloves garlic, minced
1 tsp. ginger, minced
1/4 cup niter kibbeh
1/4 cup berbere
1/2 cup vegetable stock
2 TB red wine
1/2 tsp. salt
1/4 tsp. pepper
2-4 hard boiled eggs (optional), peeled
Directions:
Puree onions, garlic, and ginger (with a little water if needed) in a food processor or blender. Add mixture to dry pan and simmer over medium heat until liquid evaporates, about 5-10 minutes, careful not to burn. Add niter kibbeh, paprika, and berbere and simmer for 2-3 minutes, stirring frequently. Add stock, wine, salt, pepper, and soy nuggets. Cover, reduce heat to low, and simmer for 45 minutes. Add water as necessary to keep a sauce consistency. Add hard boiled eggs and simmer for 10 more minutes. Add more salt and pepper if necessary and serve over rice with injera (Ethiopian flatbread).
