Ful Medames

This bean stew is Egypt's favorite breakfast item. Sometimes served with the ingredients on the side as dressings, everything is combined here to make a hearty stew.


2 cups brown (Egyptian) fava beans, soaked overnight and drained (or two 14 oz. cans, drained) - substitute aduki beans if brown favas are not available
1/4 cup olive oil
1 onion, diced
1 tomato, diced
1/3 cup parsley, minced (reserve a few pinches for garnish)
1 tsp. ground cumin
2 TB lemon juice, freshly squeezed
1/2 tsp. red pepper flakes
Salt & pepper to taste


Simmer drained beans, covered, for about 2 hours, until tender. Drain beans, reserving 2 cups of cooking liquid. Remove a ladle or two of beans from the pot, combine with the reserved cooking liquid, and mash until smooth. Combine mixture with rest of beans, add rest of ingredients, and simmer for 5 minutes.

Serve with fried eggs and grilled pita bread.

I want to make this....do i peel/skin the beans after they have soaked???
