Garlic Naan

Though naan is usually made in a tandoor, this version is made in a good-old western oven...


1 lb white flour
1 oz dried yeast
1 tsp nigella seed (also known in Indian stores as charnushka or kanolfi seed)
6 tbsp plain yogurt
2 tbsp ghee or melted butter
1 tsp salt
1 tsp sugar
3/4 cup warm water
2 tsp. garlic, minced
oil or ghee to coat


1. Mix sugar into warm water until dissolved.

2. Add yeast to sugar-water mixture and wait until yeast froths (proofs).

3. In another bowl, mix salt with flour and nigella seeds.

4. Make a well in the center of flour mixture and add yogurt, ghee, and yeast mixture.

5. Add garlic and knead well until it forms a smooth dough. Shape into a ball. If dough is sticky, add more flour until elastic.

6. Coat another bowl with oil or ghee and roll dough into it until fully coated.

7. Shake off excess oil and cover with damp cloth.

8. Wait 2 or 3 hours, until dough doubles in size.

9. Knead the dough and divide into around 6 equal portions. Flatten each portion to 1/2" thick.

10. Preheat oven to 450 degrees and bake for 10 mins. Brush with ghee or butter, sprinkle with a little bit more minced garlic, and serve.
