Khao Koor (Roasted Rice Powder)
This crunchy, toasty concoction adds a unique flavor and texture to Thai dishes, such as this one - "Tofu and Long Beans with Crying Tiger Sauce"... The Thais tend to use jasmine rice for this preparation, while the Lao and Isan Thai use sticky rice.
1 cup uncooked jasmine rice or sticky rice
Heat a wok or pan over medium heat. Add rice and toss continuously over heat until golden brown. Place rice in a coffee grinder or mortar and pestle and grind to a coarse powder.
