A light soup eaten as breakfast with rotis (flat coconut bread), Indian happe (thin roasted steamed rice noodles) or rice.
Ingredients:
2 potatoes, peeled and diced small
1 carrot, thinly sliced
1 tomato, diced
Piece of coconut cream or 1 cup of thick coconut milk
1 tsp. fenugreek
1 tsp. turmeric
1 tsp. hot chili powder (or paprika powder)
1 tsp. curry powder
1 tsp. coriander powder
2 cups water or vegetable stock
Salt to taste
Directions:
Heat a saucepan and add all the ingredients except the coconut cream. Simmer until potatoes are cooked through and add the coconut cream. Stir and simmer for 5 minutes.
