Translation: Lao Herb Salad

Similar to the minced meat salads that are favored all over Southeast Asia, this is the Lao spin on a dish also known as laap or larb.

Ingredients:

1 clove garlic, minced
1 cup tofu, diced and browned in oil
2 green onions, chopped
1 TB cilantro, chopped
1 stalk lemongrass, white part only, minced
1 cup mint, chopped
1/2 tsp. salt
1 TB roasted & ground sticky rice
2 chilies, thinly sliced
1 handful thinly sliced banana flower
2 long beans, chopped
1 TB lime juice
1 TB fresh galangal, very finely chopped

Directions:

In a pan with some oil, saute the garlic until lightly browned. Add tofu and stir to cover with garlic. Combine with remaining ingredients and serve.

Prep Time: 15 minutes

Cooking Time: 15 minutes

Servings: 2-4
