
Kuku Siki

This spicy Swahili stew, usually made with chicken, is flavored with coconut vinegar, which can usually be found in Asian & Filipino groceries.
Ingredients:
1 lb. fried tofu or soy protein
1 onion, chopped
1 TB vegetable oil
1 can coconut milk
2 tomatoes
1 cup coconut vinegar
2 tsp. turmeric
1 tsp. ground cinnamon
2 tsp. black pepper
1 tsp. salt
Directions:
Heat oil in a pot over medium heat and cook onions until translucent. Add dry spices and cook 2 minutes, until fragrant. Add remainder of ingredients and simmer for 15-20 minutes. Serve with rice.
