Maque choux is a traditional Southern Lousiana dish that has Native American origins.
Ingredients:
8 ears sweet corn
3 TB butter
1 medium onion, chopped finely
1/2 green bell pepper, chopped finely
1/2 red bell pepper, chopped finely
1 stalk celery, chopped finely
1 large tomato, peeled, seeded, and chopped
1 tsp salt
3/4 tsp black pepper
1/2 tsp cayenne pepper
1 tsp sugar
1/2 cup heavy cream
Chives, finely chopped, for garnish
Directions:
Shuck the corn. Cut all the kernels off the cobs, cutting about 3/4 of the way down so the whole kernel is not cut off, but most of it. Place kernels in a bowl and hold cobs over bowl, scraping a butter knife up and down the cob to extract the remaining juice and bits of corn into the bowl.
Heat butter in a pan over medium heat and add onions, celery, and bell peppers. Saute for 5-6 minutes and then add tomatoes, Cook 5 more minutes. Add remaining ingredients and simmer for about 10-15 minutes, until corn is tender. Add a little water if the mixture becomes too dry. Ladle into bowls and garnish with chives.
