Morel, Fava Bean, and Spring Onion Ragout

This fresh recipe takes advantage of vibrant spring vegetables and the classic combination of fava and mint. The hazelnuts give it a perfect finish.
Ingredients:
1 TB butter
1 cup morels, chopped into large chunks
2 cups freshly shelled fava beans
1 cup spring onion, chopped
1 tsp extra virgin olive oil
1/8 tsp. lemon zest
1 TB mint, chopped fine
1/2 cup creme fraiche
1/4 cup hazelnuts, toasted and crushed
salt & pepper, to taste
Directions:
Add chopped mint to creme fraiche, stir to blend, and refrigerate until ready to use. Heat a pot of boiling water and blanch shelled fava beans for 2-3 minutes until tender. Drain in a colander and run cold water over to cool. Heat butter in pan and saute spring onion for 2-3 minutes. Add morels and cook 3-4 more minutes on medium heat. Add fava beans, olive oil, lemon zest, salt and pepper and cook 10 minutes more on low heat to let flavors blend. Serve and garnish with mint creme fraiche and hazelnuts.
