Morels 3 Ways: Soy Sauce Pickle, Caraway Cream, En Papillote

This is a wonderful tasting plate that really brings out the unique flavors of the morel. Caraway seed elevates the earthy flavors, while the soy-sherry pickling liquid provides a nice counterpoint. The morel cooked en papilllote may be the best preparation, as it truly lets the mushroom speak for itself.

Ingredients:

Soy Sauce Pickle

6 dried shiitakes
1/2 cup hot water
1/4 cup soy sauce
1/4 cup sherry vinegar
1/4 cup sugar
1/2" piece of ginger, peeled
8 morels, cleaned and halved

Pour hot water over dried shiitakes in a bowl and let sit for 30 minutes. Add shiitakes, soaking water, soy, sugar, ginger and vinegar to a pot and simmer for 5 minutes until sugar is dissolved. Reduce heat to lowest setting, where mixture barely bubbles, add morels and heat for about 20 minutes, keeping the heat very low. Pour contents of pot into glass jar and refrigerate for at least 2 hours. Use the morels in this dish and keep the shiitakes around for snacking on later.

Caraway Cream

1/4 cup heavy cream
8 morels, cleaned and halved
1 TB butter
1/4 tsp caraway seed
pinch of kosher salt

Heat caraway seeds and cream in a pan over very low heat (lowest setting) until it lightly bubbles. Cook 5 minutes, stirring frequently. Remove cream from pan and set aside. Strain seeds out of cream and discard. Place butter in plan and het. Saute morels in butter 2-3 minutes and add cream. Stir to heat through, add pinch of salt and pepper and serve.

En Papillote

parchment paper
8 morels, whole, cleaned
1/4" thick slice lemon
2 TB butter, divided into 4
2 sprigs thyme, each cut in half
2 tsp. shallot, minced, divided into 4
1 1/4 tsp. garlic, minced, divided into 4
kosher salt
black pepper
lemon wedge, for squeezing

Cut a square or circle of parchment paper about 6" wide. Cut lemon slice into 4 quarters and place one quarter in the middle of each piece of paper. Place 1/4 of the butter on each lemon slice, topping each with half a thyme sprig and 1/2 tsp minced shallot and 1/4 tsp minced garlic. Place 2 morels on top, squeeze a few drops of lemon on top, and finish with a small pinch of salt and pepper on each. Fold the parchment over to make a package and crimp the edges to close. Bake at 425° for 15 minutes. Remove from oven, and serve either in paper or removed to a plate.
