Moussaka

Ingredients:

6 eggplants
2 TB olive oil
4 onions, chopped
2 TB olive oil
1.5 cups ground beef substitute (optional)
3 cups tomatoes, diced (with juice) 4 cloves garlic
2 TB tomato paste
1/2 cup red wine
1/8 tsp. ground cloves
1 tsp. dried oregano
1/8 tsp. allspice
1 bay leaf
1/4 tsp. cinnamon
1 cup pecorino cheese
1/2 cup breadcrumbs
Salt, pepper to taste

Directions:

Preheat oven to 350 degrees. Slice the eggplant into 1/2" slices and salt on both sides and let sit for 30 minutes. Rinse and pat dry. Brush with olive oil and bake in oven until cooked through, about 15 minutes.

Make the sauce by sauteeing onions and garlic in olive oil until translucent. Add tomatoes, tomato paste, wine, salt, pepper, and spices and simmer over medium-low heat for 15-20 minutes. Stir in ground beef substitute (if using) until heated through. Remove bay leaf.

Coat a 9 x 13 baking dish or casserole with oil and scatter breadcrumbs over bottom of dish. Put half of the eggplant in the dish, overlapping the slices to form a layer. Cover with half the tomato sauce. Repeat with remaining eggplant and tomato sauce to form a second layer. Pour the bechamel over the top, spreading around to even. Sprinkle cheese on top and bake uncovered until lightly browned and bechamel is set like custard, about 1 hour. Let rest for 10 minutes before serving.

Bechamel Sauce for Moussaka

6 TB flour
5 TB butter
3 cups hot milk (whole)
Salt, pepper, nutmeg
2 egg yolks
1 egg, beaten

Melt the butter over low heat in a pan. As soon as the butter is melted, add the flour and stir until smooth. Increase the heat to medium-low and start to stir in the milk, slowly, constantly stirring to break up lumps. Continue stirring until sauce begins to thicken slightly. Remove from heat and add a small pinch of salt, pepper, and nutmeg to taste. Stir in egg yolks and beaten egg and return to heat briefly, whisking until the eggs are well blended. Remove from heat.
