This vinegar-based coleslaw is traditionally served alongside North Carolina's famous barbeque
Ingredients:
1 head cabbage, chopped
2 carrots, grated
1 green bell pepper, very thinly sliced
1/2 cup cider vinegar
1/2 cup sugar
1/4 cup vegetable oil
1 tsp celery seed
1 tsp black pepper
1 tsp salt
1/2 tsp red pepper flakes
Directions:
Mix vinegar, sugar, oil, and spices until sugar is dissolved. Pour over cabbage, carrots, and peppers and mix until well coated. Place in the refrigerator. You can eat it as soon as you want, but it really should sit overnight. At least 2 hours if you can help it.
