Niter Kibbeh is a spiced, clarified butter used in many Ethiopian dishes.


1 cup ghee or clarified butter
1 clove garlic, minced
1 tsp. ginger, minced
1 TB red onion, minced
1/4" cinnamon stick
1/4 tsp. cardamom, ground
1/4 tsp. turmeric, ground
1 clove
1/8 tsp. fenugreek, ground
1/8 tsp. nutmeg, ground


Toast ground dried spices in a pan over low heat until fragrant, careful not to burn. Heat ghee over medium heat and add garlic, ginger, and onion and simmer for 1-2 minutes. Add dry ingredients and lower heat to very low. Simmer for 30 minutes. Strain ghee through cheesecloth (repeat until ghee is relatively free of spices). Pour into a jar and refrigerate.
