Okra w/ Tomato-Lemon Sauce

This Southern Egyptian dish is great served with flatbread or kochari.

Ingredients:
1 lb. fresh okra, soaked overnight, and cut into smaller pieces.
1 large onion, thinly sliced
4 TB olive oil
3 cloves garlic, finely chopped
2 tomatoes, sliced
1 TB coriander seed, crushed
Salt and black pepper, to taste
2 TB fresh lemon juice
Directions:
Fry the sliced onions in olive oil until lightly browned. Add the okra and fry for another 5 minutes. Add the sliced tomatoes and garlic, stir and fry for another 10 minutes. Add 1 cup hot water, salt & pepper, and the crushed coriander seeds, and simmer for another 45 minutes. Add lemon juice and simmer for another 15 minutes before serving.
