Okra w/ Tomato-Lemon Sauce

This Southern Egyptian dish is great served with flatbread or kochari.


1 lb. fresh okra, soaked overnight, and cut into smaller pieces.
1 large onion, thinly sliced
4 TB olive oil
3 cloves garlic, finely chopped
2 tomatoes, sliced
1 TB coriander seed, crushed
Salt and black pepper, to taste
2 TB fresh lemon juice


Fry the sliced onions in olive oil until lightly browned. Add the okra and fry for another 5 minutes. Add the sliced tomatoes and garlic, stir and fry for another 10 minutes. Add 1 cup hot water, salt & pepper, and the crushed coriander seeds, and simmer for another 45 minutes. Add lemon juice and simmer for another 15 minutes before serving.

I love this dish, one of my favorites and an excellent way to cook delicious okra. I like to use a can of diced tomatoes and up to 2 cups of warmed beef stock then simmer down for a little less time - the sauce is still thick and delicious while ensuring the okra is soft yet distinctly \'crisp\'. Sometimes I add a whole thickly diced zucchini and fry it off with the okra before adding liquids. I juice a whole lemon and tone down the tartness by adding a pinch or two of brown sugar (this is also good to tone down the sharpness of tomato). Enjoy!
