Ras El Hanout

Ras El Hanout, literally Arabic for "top of the shop", alluding to the fact that this mixture is the best the spice merchant has to offer. This exotic spice blend is found throughout Morocco, Tunisia, and Algeria and can sometimes have 20-30 ingredients (and even up to 100!) - no two ras el hanouts are the same. It complements many dishes well, such as couscous and tagines.

Ingredients:
2 tsp white peppercorns
10 dried small rosebuds
1 TB orrisroot, whole
10 sticks cinnamon
12 blades of mace
15 allspice berries
4 black cardamom pods
2 TB dried gingerroot (whole)
1 TB dried galangal
1/2 tsp. lavender
1 tsp. aniseed
2 tsp dried turmeric root (whole)
6 cloves
2 dried red chilies
3 whole pieces of nutmeg
1/4 tsp saffron threads
1/2 tsp cubeb pepper
1/2 tsp grains of paradise
Directions:
Toast cumin, coriander, and peppercorns lightly in a pan over medium heat (individually) until fragrant, about 1 minute. Place all ingredients in grinder and pulse until a powder consistency is reached.
