
Rice-Stuffed Tofu (Inari)

A classic sushi joint preparation using tofu and sushi rice... If you can't find inari pouches (pre-made fried tofu pockets), you can deep fry big slices of tofu and cut a pocket in them (after they're cool) with a knife.
Ingredients:
12 inari pouches (deep-fried tofu pockets)
prepared sushi rice
shredded, toasted nori
black and white sesame seeds
1/2 cup vegetarian dashi or vegetable stock
2 TB mirin
2 TB soy sauce
Directions:
Stuff each tofu pocket with a little bit of the sushi rice. Place stuffed tofu into broiler, with rice side up, until rice is slightly brown and crispy on the top.
Meanwhile, heat vegetable stock or dashi in saucepan. Add soy sauce and mirin and stir to combine.
Remove tofu from broiler and place on a platter in a circular pattern. Pour sauce over tofu and garnish with a bit of shredded nori and sesame seeds. Serve as an appetizer platter.
