Roasted Parsnip Puree

Ingredients:
2 pounds parsnips, peeled, cut into 2" chunks
2 TB olive oil
Salt & pepper, to taste
1 cup milk or heavy cream
Directions:
Heat oven to 400 degrees. Place cut parsnips in a baking dish and toss with olive oil to coat. Season with salt and pepper. Roast for 40-45 minutes, until browned and soft. Place parsnips in a food processor and add milk or cream, and blend until a smooth consistency.
