Sambal Taliwang
Translation: Ghost Chili Sauce
Cuisine: Indonesian
Region: Lombok
Recipe Type: Sauce
Vegetarian / Vegan: Vegan
The naga jolokia pepper, or ghost chili, is the world's hottest pepper, clocking in at over a million units on the Socville scale. This sambal is native to the village of Taliwang on Lombok Island and is Indonesia's hottest chili sauce. Be very careful with these peppers, they are not for the faint of heart.
Ingredients:
4 naga jolokia peppers, ground to a paste
1 TB garlic, ground to a paste
1 tsp. salt
1 tsp. soy sauce
2 TB vegetable oil
Directions:
Blend ground chilis, salt, soy, and and garlic together in a mortar and pestle. Heat oil in a pan over medium heat and add chili-garlic mixture. Simmer for 3-4 minutes until mixture darkens slightly and becomes fragrant.
