Seeni Sambola

Ingredients:
2 TB coconut oil
1 lb onions, thinly sliced
2 tablespoons chili powder
1 teaspoon ginger, minced
1 teaspoon salt
1/4 cup tamarind water
1 cup coconut milk
8 curry leaves
1 clove
1 cardamom pod, husk removed
1 stick cinnamon
1 tablespoon sugar
Directions:
Mix the sliced onions, tamarind, ginger, salt, dry roasted chilli powder, clove, cinnamon, cardamom, curry leaves,
yellow powder in a bowl and let sit for 15-20 minutes. Heat the coconut oil very hot and add the mixture to it.
Cover with a lid and simmer for 5 minutes. Add coconut milk and sugar and simmer for additional 10 minutes.
Let it cool down and serve with rice, chapattis, naan.
