Applewood Smoked Kale

Ingredients:

2 bunches kale
1 onion, thinly sliced
1 clove garlic, minced
1 TB cider vinegar
1/2 tsp red pepper flakes
1/2 tsp sugar
2 TB butter
Salt & pepper, to taste

Applewood (or other fruit wood) for smoking

Directions:

Smoke kale over applewood chips at around 200 degrees for 5 minutes. Rinse and destem kale. Chop kale into 1/2" strips. Heat butter in saucepan over medium-high heat and add onion and garlic and cook for about 4-5 minutes, until onions are translucent. Add kale and cook until desired tenderness - this can take anywhere from 5-20 minutes depending on how you like your greens. We keep on the 5 minute side ourselves.
