Spinach Artichoke Dip

2 oz. Romano cheese, grated
4 cloves of roasted garlic
10 oz. spinach, if frozen thaw and squeeze dry, if fresh, wilt and squeeze dry
8oz. softened cream cheese
2 eggs
8oz. can of small artichoke hearts in water, cut in to quarters
6 oz. Mozzarella cheese, shredded
raw vegetable slices and toasted baguette for serving


Preheat oven to 375 degrees F. Lightly spray a small casserole dish with oil.

Combine Romano cheese, garlic, spinach, and cream cheese in a food processor. Mix together, then add eggs and fully incorporate. Transfer to mixing bowl and fold in shredded Mozzarella cheese. Gently fold in quartered artichoke hearts and pour into prepared dish.

Bake for 25 minutes. Serve with raw vegetables and toasted baguette.
