Tacu-Tacu



Translation: Peruvian Beans and Rice

Ingredients:

2 cups canary beans, soaked overnight (or at least 6 hours)
1 cup cooked rice
2 TB oil
1 onion, chopped
3 cloves garlic
1/3 cup aji amarillo paste
Salt and pepper to taste

Directions:

Drain and cook beans until soft (about 90 minutes). Mash beans with fork until a rough puree forms. Heat a pan over medium-high heat and saute onions and garlic in oil until lightly browned. Add the aji and cook for a couple more minutes. Add beans and cooked rice and stir to combine. Add salt and pepper to taste.
