This Peruvian dish is very similar to lomo saltado, except that it uses noodles instead of rice and potatoes. This dish is a true fusion of Latin American, Asian, and Italian flavors.
Ingredients:
12 oz. dry spaghetti
3 TB oil, divided
1.5 cups tofu, diced
1 red onion, cut into strips
1 red bell pepper, cut into strips
2 tomatoes, cut into eighths
3 green onions
For sauce:
2 TB soy sauce
2 tsp aji amarillo paste
1.5 TB tomato paste
1.5 TB water
1.5 TB red wine vinegar
1 TB cilantro, chopped
1 TB parsley chopped
parsley, for garnish
salt and pepper to taste
Directions:
Boil spaghetti according to directions until al dente. Drain, run under cool water until room temperature, and set aside. Place 2 TB oil in pan over medium-high heat and fry tofu until golden brown. Remove from pan. Add remaining 1 TB oil and fry red onion, red pepper, and green onions for 3-4 minutes, until translucent. Add tomatoes and cook 1 more minute. Combine sauce ingredients and add to pan. Simmer 30 seconds, add spaghetti and tofu, and quickly toss. Season with salt and pepper to taste and serve.
