Thai-Style Pesto Sauce
This is a great fusion recipe, employing a western style preparation with Asian ingredients. This is great as a dipping sauce for spring rolls or tossed with rice noodles.
2 shallots
4 cloves garlic
1 cup Thai basil
1/2 cup mint
1/2 cup cilantro
2 Thai chilis
3 stalks lemongrass, white part only
1 TB palm sugar
2 TB lime juice
2 kaffir lime leaves
1 sunchoke, peeled, sliced, blanched until tender, and pureed with a bit of water
peanut oil, as needed
salt, to taste
1 cup roasted peanuts
Puree first 11 ingredients in a food processor. Add peanut oil as necessary to produce a smooth paste. Salt to taste, and add peanuts. Pulse the food processor a few times to coarsely chop the peanuts (make sure not to grind them up too much!).
