Tofu "Bacon"

Bacon is one of the Western world's favorite things to eat. It shows up in thousands of recipes across Europe and North America, and in places like the Southern US, is eaten in some form or another almost every day.

We feel that vegetarian "bacon" analogues that can be found in the freezer section are strange tasting and slightly reminiscent of pinkish cardboard, not to mention highly processed. As an alternative, we've created this simple tofu recipe which emulates the crisp and savory textures and smoky-sweet, peppery flavors of cured, thick-cut bacon. Smoking with applewood gives the tofu a nice, smoky flavor without being too harsh, as we've found with other types of wood, like hickory.



Ingredients:

1 block tofu (around 14 oz-1 lb), drained and pressed
2 TB maple syrup
2 TB soy sauce
1 tsp black pepper, coarsely ground
Applewood chips, for smoking, soaked in apple juice (or water) for 30 minutes (or any other fruit wood)

Directions:

Cut tofu in half, keeping your knife parallel to the board so you get two "top and bottom" halves, each about 1" high, 4" wide, and 5-6" long. Combine maple syrup, soy, and pepper in a baking dish or bowl and marinate tofu for 30 minutes. Prepare a smoker at 225 degrees and add applewood chips to smoker. Remove tofu from marinade, reserving marinade for later, and smoke for 40 minutes.

Halfway through smoking time, 20 minutes, baste tofu again with marinade on both sides, and then flip tofu over. Remove from smoker and cut tofu into "bacon-style" slices, being careful not to make them too thin, otherwise they will fall apart when handled. Brush slices lightly with reserved marinade and let sit for 5 minutes to absorb. Heat oil in a pan over medium high heat and fry slices for 2 minutes on each side, until browned and slightly crispy.
