
Tuong Ot Toi

This sauce is amazing on spring rolls, noodle dishes, and many, many other things. Note that while a popular chili sauce in America (you know, the one with the rooster and green cap?) is labelled "Tuong Ot Sriracha", it is not the same as true Vietnamese tuong ot (or even the same as Thai sriracha, for that matter). This sauce is mass-produced in America, and we suggest you avoid it - especially considering how easy it is to make the real thing!
Ingredients:
1/2 lb. hot red chilies, seeds and stems remvoed (cayenne, Thai red, or red serranos), chopped
6 cloves garlic, chopped
3/4 tsp. sea salt
2 TB sugar
2 TB white vinegar
Directions:
Place all ingredients in a food processor and process until combined. Add sauce to a pan and bring to a simmer over medium heat. Lower heat to low and continue to simmer for about 4-5 minutes. Remove from heat and cool. Place in a sterilized jar in the refrigerator.
