Tzatziki Sauce

This yogurt based sauce is used in Greece and Turkey as both a mezze and sauce for fried or grilled foods.

Ingredients:
1 large English (seedless) cucumber
1/4 cup salt
8 oz. Greek yogurt, or strained regular yogurt
3 TB fresh dill
2 garlic cloves, chopped
Directions:
Peel cucumber, slice in half lengthwise, and remove seeds (if there are any). Slice into 1/4 inch pieces. Thoroughly salt both sides of each slice and place on a rack that will allow water to drain from the cucumber. Allow to drain for 1 hour. Meanwhile, combine yogurt, dill, and garlic. Cover and refrigerate.
Rinse salt from cucumber slices and squeeze dry with a tea towel. Dice into cubes and stir into yogurt mix. Return to refrigerator for at least one hour before serving cold.
