Vegetable Anticuchos

Anticuchos are a famous Peruvian street food, where they are traditionally made with cow hearts. The aji pastes are essential to the flavor and can be found in some Latin groceries or ordered online.
Ingredients:
For marinade:
1/4 cup garlic, minced
1 TB cumin, freshly ground
1/4 cup olive oil
2 TB aji amarillo paste
3 TB aji panca paste
1 TB annato seeds, ground
1/2 cup red wine vinegar
1 tsp. dried oregano
1 zucchini, cut into 1-2" chunks
1 eggplant, cut into 1-2" chunks
1 onion, cut into 1-2" chunks
1 yellow squash, cut into 1-2" chunks
1 red bell pepper, cut into 1-2" chunks
4 ears of corn, boiled
4 potatoes, boiled
Directions:
Blend marinade ingredients together and marinate zucchini, eggplant, onion, squash, and bell pepper for 1 hour. Place vegetables on bamboo skewers and grill over a charcoal grill, basting with the remaining marinade until cooked through, about 2-3 minutes per side. Serve with the boiled corn and potatoes.
